宋元时期是我国传统饮食文化发展的重要阶段之一,出现了诸多新的内涵和发展趋势,“嗜蜜”饮食风尚即是其中之一。这一时期,人们对蜜制甜食的偏好尤为明显:以蜜酒、“渴水”为代表的各种蜜制饮品备受各阶层之青睐;各色蜜制面点大量涌现,成为了当时面食的重要构成;蜜与肉食的结合,更是开创了食蜜之新风尚;除此之外,宋元文学也对蜜与甜颇为关注,赋予其诸多的文化意象。宋元“嗜蜜”饮食风尚的形成,有着深层次的社会原因:逐渐成熟的养蜂酿蜜技术,奠定其物质技术基础;而这一时期经济社会的一系列发展变革,尤其是城市经济的发展、市民阶层与士大夫阶层的形成发展,则是这一风尚形成更深层次的经济与社会原因。宋元时期的“嗜蜜”风尚增加了甜味食物的种类,促进了食品的商品化,建构了精致化与世俗化并存的饮食消费文化,成为近世饮食文化开端的重要表征。
Abstract:
Song and Yuan dynasties were an important stages for the development of Chinese traditional food culture. Many new connotations and development trends emerged. "Addicted to Honey" food fashion was one of them. In this period, people’s preference for honey sweets was particularly obvious: honey wine, "thirst water" as the representative of honey drinks were favored by all classes; Various kinds of honey pastry emerged in large numbers and became an important component of pasta at that time. The combination of honey and meat created a new fashion of eating honey; In addition, the literature of Song and Yuan dynasties also paid much attention to honey and sweetness, endowed it with many cultural images. There are deep social reasons for the formation of "addicted to honey" dietary fashion in Song and Yuan dynasties: the gradually mature technology of beekeeping and honey-making laid its material and technological foundation; a series of economic and social changes during this period, especially the development of urban economy, the formation and development of the citizen class and the scholar-bureaucrat class, were the deeper economic and social reasons for the formation of this fashion. The "addicted to honey" fashion of the Song and Yuan dynasties increased the variety of sweet foods, and promotes the commercialization of food and constructed a diet consumption culture coexisting with refinement and secularization, which became an important symbol of the beginning of modern diet culture.
