摘要:
牛肉是汉代民众重要的肉食,民众既能够在市中购买牛肉,也可以在宰杀处购买牛肉。汉代的活牛价格和牛肉价格皆不稳定。西北地区和南方地区的活牛价格差距以及居延地区不同年代的活牛价格差距均较大;纯牛肉主要按斤售卖,临湘地区的售价高于西北地区,而牛下水多按件售卖,不同部位的价格差距明显。西北地区活牛价值高于屠牛卖肉所得收益,可能是由于牛在农耕和交通运输中作用巨大,故而活牛的利用价值高;临湘地区的屠牛卖肉收益高于活牛价值,则是因为牛耕尚未普遍以及牛在交通运输中也未取得优势。虽然汉政府出台过“禁屠牛”政策,但在某些时间和范围或多种情况下允许民众屠牛吃肉,“禁屠牛”只是社会生产力不足时的临时举措。
Abstract:
Beef was an important meat for the people of the Han Dynasty, and the people in the interior bought beef in the city and the border soldiers bought beef in the slaughterhouse. During the Han Dynasty, the price of live cattle and the price of beef were unstable. The price gap between live cattle in Northwest China and South China and the price gap of live cattle in different years in Juyan area were large. Pure beef was mainly sold by the catty, and the price in the south was higher than that in the northwest, while the cattle were mostly sold by the piece, and the price difference between different parts was large. The value of live cattle in Northwest China was higher than that of slaughtering cattle and selling meat, which may be due to the huge role of cattle in agriculture and transportation, so the utilization value of live cattle was high. The fact that cattle slaughtered meat in the south earned more than the value of live cattle may be due to the fact that cattle farming has not yet become widespread, and cattle have not gained an advantage in transportation. Although the Han government had issued a policy of "banning the slaughter of cattle", however, slaughtering cattle for meat was allowed at specific times, in particular areas or under numerous circumstances, and the "ban on slaughtering cattle" was only a temporary measure when social productivity was insufficient.
