摘要:
转磨作为粮食加工工具,有力地推动了小麦在中国被广泛接纳的进程,对中国饮食文化的发展有着深远影响。本文分析了内地考古出土转磨入料口的演变与发展过程,并与其他地区的地中海类型转磨相比较,揭示我国内地转磨技术拥有完整的形成、传播和发展过程,应属于独立发明。东西方转磨不同的技术追求,表明中国内地类型转磨是在小麦逐渐融入本土作物——主食传统的过程中发明的。内地转磨的传播过程则表明,其技术传播依赖于小麦种植的发展以及人口的跨区域流动。
Abstract:
Rotary mill has effectively promoted the process of wheat being widely accepted in China and has a profound impact on the development of Chinese food culture. This paper analyzes the evolution and development process of the inlet of the Chinese type rotary mill, and compares it with the rotary mill of the Mediterranean type in other regions. It reveals that the rotary mill in the China had a complete generation, development and diffusion process, which should belong to independent invention. The different technical pursuits of Eastern and Western rotary mill show that the type of rotary mill in China was invented in the process of wheat gradually integrating into the native crop and staple food tradition. The diffusion process of rotary mill in China shows that its technology transmission depended on the development of wheat planting and the cross-regional flow of population.
