水磨是一种典型的水力加工机械,以制粉为主要功能,主要用于谷物加工,并可延展至其它制粉加工领域。6-12世纪,中国社会渐次发生了颇具革命性意义的饮食习俗变迁:一是小麦逐渐完成了由“粒食”向“粉食”的转变,粟、麦并重的作物种植与消费利用格局在北方地区得以确立;二是饮茶之风日盛,饼茶、末茶构成了其时成品茶叶的主要形态;三是对油料作物的榨取和利用增加。以上诸项消费风靡,对所关涉自然物种的处理加工尤其是庞大的制粉需求,成为水磨在中国社会重要的成长动力。
Abstract:
The watermill was a typical hydraulic processing machine with the main function of milling,which was mainly used for grain processing and could be extended to other fields of milling. In the 6th and 12th centuries, Chinese society gradually experienced revolutionary changes in diet customs: First, wheat gradually completed the transition from “grain food” to “powder food”, and the pattern of crop cultivation and consumption utilization of both millet and wheat was established in the northern region; Second, the ethos of drinking tea was flourishing, and the finished tea of that era was made into a cake or ground into fine powder; The third was the increase in the extraction and utilization of oil crops. All of the above-mentioned consumption involved the processing of the natural species, especially the huge demand for milling, which had become an important growth engine for the watermills in Chinese society.
