摘要:
西瓜非中国本土起源,而是经由陆上丝绸之路引进。其在古代中国的传播推广具有过程性和系统性双重特征。通过对这一进程的历时性考察,指出西瓜的引种传播可以分为北国立足、西瓜南渡、南北并进和全面发展四个阶段,同时又呈现一种点、线、面、体四级三维进阶模式。作为一类优质果蔬,西瓜受到古代中国各饮食文化阶层的普遍欢迎,并且至少在食物原料、加工技艺和风俗习惯等三个方面对传统饮食文化产生了深远影响。西瓜的引种及本土化进程是中外互通、南北交流和民族融合等因素共同作用的结果,而中国传统饮食文化也是一个多元交汇的综合性开放体系。
Abstract:
Watermelon is not the China native original crop that was introduced into China through the Land Silk Road.The introduction and spread of Watermelon in ancient China had both procedural and systemic characteristics.Through the diachronic investigation of this process, points out that the introduction and spread of watermelon could be divided into four stages such as foothold in the northland,crossing the Yangtze River to the south,north and south moved forward together, comprehensive development. At the same time, this process also presents a kind of dot, line, face, body four-level and three-dimensional advanced mode.As a kind of high-quality fruit and vegetable, watermelon was well received in all diet culture class of ancient China, which had a profound influence in three aspects of the traditional diet culture at least,that is the food raw materials, processing techniques and customs and so on.The Introduction and localization process of watermelon was the joint action results of the factors such as the exchange of Chinese and Foreign, the communication of the south and the north, and the fusion of ethnic minorities and Han nationality, and the Chinese traditional diet culture was also a multiple intersection comprehensive open system.
