摘要:
淮扬饮食文化作为中国传统饮食文化之一,拥有悠久的历史和丰富的文化内涵。淮扬饮食自春秋时期便开始萌芽生长,到明清时期始闻于世。它的发扬光大与大运河紧密相关。大运河的开凿以及漕运制度使得淮扬地区成为帝国商业重镇,城市得到极大发展,为淮扬饮食文化的发展奠定了物质基础。外埠食材通过大运河交汇于淮扬地区,连同淮扬本地特产共同构成了淮扬饮食的食材基础。那些为皇室与富商服务的名厨则将普通食材雕琢成精美菜品。这些美食又被文人传播到大江南北,淮扬风味遂从地方风味演变成中华名肴之一。在新时代重点研究大运河与淮扬饮食文化之关系,有助于深化运河饮食文化的研究,从而促进中国传统饮食文化遗产的研究与保护。
Abstract:
Huaiyang food culture, as one of the traditional Chinese food culture, has a long history and rich cultural connotation.?Huaiyang cuisine began to sprout and grow in the Spring and Autumn Period and became popular in the Ming and Qing dynasties. Its development is closely related to the Grand Canal. The construction of the Grand Canal and the water transport system made Huaiyang an important commercial town of the empire, and the city was greatly developed, which laid a material foundation for the development of huaiyang food culture. Through the Grand Canal, the foreign food materials are mixed in Huaiyang area, together with the local specialties of Huaiyang, which constitute the food material basis of Huaiyang diet. Famous chefs who served royalty and wealthy businessmen carved ordinary ingredients into exquisite dishes. These delicacies were then spread to all parts of China by literati, and Huaiyang cuisine evolved from local cuisine into one of China’s famous cuisines. Focusing on the relationship between the Grand Canal and huaiyang food culture in the new era is helpful to deepen the study of the canal food culture and promote the research and protection of the Chinese traditional food cultural heritage.
